About Us
We’ve always been health-conscious. On February 15, 2023, we got weirdly specific about applying that to ice cream.
We had dabbled in homemade ice cream before that. After that date, three questions took over the kitchen:
1. Could ice cream skip the sugar spike?
Most ice cream is built on sugar or a pile of artificial sweeteners. We wanted something that still tasted like a treat, without the blood-sugar roller coaster that usually comes after.
2. Could the fat in it actually work with a keto lifestyle?
Medium-chain triglycerides (MCTs), usually from coconut, are absorbed and used differently than the long-chain fats in most desserts. In human studies, MCTs have been shown to raise circulating ketones and modestly increase energy expenditure compared with long-chain fats.
3. Could we ship it?
Great ice cream is usually stuck in a freezer. We wanted a mix you could mail across the country, mix at home, and freeze into creamy pops or scoops whenever you wanted one.
So we went back into the kitchen. A lot of batches were only okay. Some were actively disappointing. After enough iterations, we landed on a recipe we were proud of: no sugar added, low glycemic impact, coconut-derived MCT powder, and flavors we actually wanted to eat again.
Skinny Beach exists to share that mix with you.
Skinny has never been this delicious.
Why MCTs
MCTs are fats with shorter carbon chains (mainly C8 and C10). Because of that structure, they go to the liver more directly than typical dietary fats and can be turned into ketones even when you are not fasting.
That is why we use MCT powder from coconuts. It is a popular addition for people on low-carb and ketogenic diets, and research suggests MCTs may support the body’s natural ketone production when they are part of a low-carb diet.
We are not selling a medical product. We are selling ice cream mix for people who want the scoop without the sugar crash.
How it works
Each bag is a dry mix. Add water for a lighter pop, coffee for a kick, or unsweetened almond milk or heavy cream for a richer scoop. Blend, pour, freeze. That is the whole point of a shippable mix: the freezer lives at your house, not on a truck.

Research we looked at
Human studies have found that MCT intake can raise circulating ketones and modestly increase energy expenditure compared with long-chain fats. Effects depend on dose, chain length, and overall diet.
